Many birds end up "bonding" to a particular human - a reflection of the strong pair bonding that many species of parrots develop. In the absence of a suitable mate of their own species they decide to select a human mate. And in the majority of cases that human mate is of the opposite sex to their own. It isn't a universal rule by any means but it is certainly a good majority.
So, I think that many parrots are able to pick the sex of the humans they co-habit with.

I think they can. I've got a handraised red rump that likes the men in my family but attacks my hand every time I put it in the aviary.

I think birds can bond to the same gender human but some of my family have birds that can tell the difference between male and female. My Aunt has a rescued Galah, 'Gal', who is really touchy and bites any guys that go near her but will let any girl pat or hold her. From their experiences I think they can tell who is who.
