I walked in yesterday to find Mardi tucking paper under her feathers and the tissue box I had for her was full of paper strips....does this confirm she's really a SHE??? Is this JUST female behaviour?

I think I have read somewhere that females do this, but I am sure someone else with more experience with lovies will confirm this. If so then congrats on your little girl ;D
Hey by the way nice to see you back here again too.

From what I read about it when Akira first started tucking it's a behaviour that's quite a lot more common in female lovebirds that are sexually mature, but immature (dunno if that's the right word haha) males will also sometimes do it as well as the females, although it's less common.
So you probably have a girl there, but Mardi may just be trying to confuse you. If you start seeing displaying behaviour as well as the tucking I'd say you have a girl.
If she starts doing an action where she leans forward and sort of crouches, lifts her tail and flutters her wings that's pretty usual behaviour for a female that's trying to get some action.

Haha it's such a funny and dramatic action, though. I was there when Caspian was first introduced to Akira and OH MY GOD. She'd barely known him two minutes before she was prancing around in front of him doing that. Poor little dude was way too young and had NO idea what she was after haha. She got pretty frustrated after a while - even tried to crawl under him in an effort to make him get a move on.
