All my birds are fed a small parrot mix (peachface mix) From turks to Alex's. and I find there is no waste.

cool thanks, dont mind me just abit nervous. I might try paulie and pepi and cookie on this mix as well as they tend to throw out most of the other seed too.

Yes ok, but i would give her more variety than just canary and sunflower,they will choose sunflower everytime because it tastes so good, but then they will pick out only the sunflower for the rest of their lives. When you get her, put her on small parrot mix and with that you can cut a couple of almonds into quarters, (she can gain a bit of Calcium from this) when she gets to handle food ok, put her on large parrot mix, by that time you will not be cutting the almonds (and not be giving full time).I give mine a "large special Parrot Mix" has a few more goodies in incl peanuts. I put my babys in a weaning cage where they have diff foods and water close by so they "experiment" picking up and nibbling what ever takes their fancy. In their weaning cage, along with hard seed and water dish, they have a low dish containing diced up veges, diff types /diff colours, fresh corn, Granny Smith Apple, carrot, pumpkin, broccoli, celery, Frozen Baby peas. (easier to digest while they are young) Introduce as many veges types as you can while they are young, (limit quantity of leafy types) then they will have no hesitation for the rest of their lives. Dont give lettuce there is nothing in it. These veges need only be big enough to handle comfortably, when she gets older, increase the size of veges so she can pick up in her hand and chew on it. When shes older and understands chewing food try a almond in the shell she will soon learn there is a reward in the center.

what veges should I steer clear from apart from the leafy type?

I would assume Judy they eat the same veges as other birds. Almost anything except avocado and lettuce and cabbage. I am not a 'too expert though, but you have a major mitchell and a galah and I would assume what ever fruit and veges you give to them would be fine. But variety is important though as Bill said especially when young so she gets used to the look of them and the taste of them.
My galah was extremely fussy and would toss anything she did not like........she loved corn and some greens and apple, but basically threw everything else out of her cage.
